
The Bar J ranch offers BBQ dinner at its finest. A true cowboy supper on a tin plate: BBQ meat of your choice (chicken, ribs, steak or combo), beans, baked potato, cornbread, applesauce, and spice cake. Following dinner the group performed old cowboy songs long after the cows came home.
Just before leaving Jackson we celebrated Nicole's first birthday (a few days early). Julie had the idea to make a bathtub cake, but with little time to prep and not all of the needed ingredients it didn't come together like she was hoping. I thought the process was fun and we sure got a good laugh trying to piece this cake together last minute before bedtime. :) For the record...I thought is was great!
After taking a ride down the alpine slide at the Snow King Mountain Resort, some of us tried the bungee trampoline. Alyssa went first and had a blast flying through the air. Gabriella was also brave enough to give it a try...check out the video clip of her flight!

Everytime we got back into the car Gabriella would sing "On the road again..." Mountain views like this along the highway definitely made the long 5 hour (one-way) drive much easier!
Driving back across the Idaho border into Utah, we all started to get a little antsy. Even Spencer expressed his cabin fever...(watch the video clip).
The Oquirrh Mountain Temple in West Jordan, UT will be dedicated on August 23. We were lucky enough to be in town and take some time to attend the Open House. It is a beautiful temple! Now West Jordan, UT is the only place in the world where you can find 2 temples within the same district. Cool, eh?
After attending the temple open house, we continued driving further north back into Salt Lake City to see some of the sights on Temple Square: We ate lunch at the Lion House Pantry (one of Brigham Young's homes for his large family), Tour of Brigham Young's house (Beehive House), took refuge from the blistering heat in the North Visitor's Center by seeing the Christus Statue, then finished our afternoon exploring the Church History Museum.

After a long day of seeing the site, we met Dad and Susanee at the Mayan Restaurant. It feels as if you are eating in the trees of the Amazon rain forest with natives diving off cliffs into a pool below. To be honest, I was so hungry I don't think I even watched the divers! We all shared the Lava brownie for dessert...after the sparkes died out, of course.

No visit to campus is complete without playing with the cool science toys at the Eyring Science Building
No vacation to Utah is complete without a visit to Manti to see Mom and enjoy the beauty of Sanpete County. After so much travel and activity, it was nice to have a couple of days to relax, visit and simply enjoy each other's company. Scott Jr. and Gabriella built fire pits in the back yard where we roasted hot dogs, marshmallows, and enjoyed hearing Mom's stories of early Manti pioneer settlers before bedtime.
